Kashmiri Chicken Pulao

Method

Take 500 gram rice, wash it properly and soak it in some water for 20 minutes.

Take 6-7 chicken thighs and cut it into even size pieces

Now wash these pieces well and drain the excessive water out, nicely.

Take 1 cup of yoghurt and add salt, 1 tsp red chilli powder, 1 tsp turmeric powder, 3 tsp coriander seed powder and 1 tsp black pepper powder

Whisk the yoghurt nicely and keep it aside.

Heat 2 tbsp desi ghee in a pan, add 4-5 cloves of chopped garlic, add 5-6 cloves,1 cup sliced onions and saute.

Now add the finely chopped ginger and 5-6 chopped green chillies and saute.

Now add the whisked yoghurt mixture and saute.

Cook for 2 minutes and once you see the specs of fat coming up, add the chicken pieces.

Add some salt too at this stage.

Cook for 1 minute and add 2 cups of water and leave it to boil. Use enough of water because the rice will be cooked in this.

Let it simmer for a couple of minutes.

When the chicken is cooked, add the rice to the chicken and allow it to cook.

Gently stir the rice because basmati after soaking becomes very fragile.

Once the rice is cooked, serve hot.

HYDERABADI BIRYANI RECIPE

Ingredients:



350 gms Basmati Rice
200 gms Potatoes
200 gms Carrots
100 gms Onions
4 Green Chilies
30 gms Ginger
20 gms Garlic
1/2 tsp Turmeric Powder
1 tsp Red Chili Powder
1 cup Curd
1 tsp Saffron
2 tbsp Milk
1/3 cup Mint ( Pudina leaves )
1/3 cup Coriander Leaves
4 tsp Rose Water
50 gms Cashewnuts
50 gms Almonds
25 gms Raisins
120 gms Ghee
Salt To taste

           
                                                         How to make hyderabad biryani :

  • Wash and soak the basmati rice for half an hour. Drain the water. Put the rice, some more water and add half the whole garam masala and salt in a pan.
  • Bring the rice to a boil and cook until the rice is done. Drain and keep aside.
  • Dice the peeled potatoes and carrots and wash them. Slice the onions and green chilies.
  • Peel ginger and garlic and chop finely. Chop the coriander and mint leaves.
  • Soak the almonds in water for half an hour and keep aside.
  • Beat the curd in a bowl and divide into two equal portions.
  • Dissolve saffron in warm milk and add it to one portion of the curd mixture.
  • Heat ghee, add the remaining garam masala and sauté over medium heat until it begins to crackle.
  • Add onions until golden brown. Then add green chilies, ginger, garlic and stir for a minute.
  • Add turmeric and chili powder, saute for half a minute add the chopped vegetables and stir for a minute.
  • Add the portion of plain curd, stir, add 2/3 cup water, and bring to a boil, then simmer until the vegetables are cooked.
  • Add the dry fruits and nuts when the vegetables are done.
  • In the handi with the cooked vegetables, sprinkle little saffron curd, mint and coriander.
  • Then spread half the rice and again sprinkle the remaining saffron-curd, mint and coriander and top it with the remaining rice.
  • Place a moist cloth on top, cover the lid tightly so that it gets sealed.
  • Put the handi on dum in a pre-heated oven for 15-20 minutes.
  • Serve the hyderabadi biryani hot with mint chutney and other vegtables.

Lesser working days take toll on industrial production in October 2014
India's Index of industrial production (IIP) declined, at sharpest pace in three-years, (-) 4.2% in October 2014 compared with 2.8% (revised) increase in September 2014. The manufacturing sector's output dipped to 2.5% in October 2014, recording largest decline in last five-and-half years. The decline in the industrial production was entirely contributed by the manufacturing sector. Lesser number of working days in October 2014 mainly led to sharp decline in manufacturing sectors output.
On the other hand, the mining sector as well as electricity generation posted healthy growth in output in October 2014 over October 2013. The mining sector output increased at four-year high pace, while the electricity generation also surged at strong double-digit pace of 13.3% in October 2014.
As per used-based classification, the output of basic goods increased 5.8% in October 2014, with the healthy growth in the output of mining and electricity. The output of intermediate goods declined 3.1%, while capital goods output also fell 2.3% in October 2014. Further, the output of consumer goods continued to decline and recorded sharpest decline for the current base year data (2004-05:100) at (-) 18.6% in October 2014. Within in the consumer goods, the production of consumer durables plunged 35.2%, while that of consumer non-durables surged 18.5% in October 2014 over a year ago.
The IIP growth for July 2014 was revised upwards to 0.9% at its second and final revision compared with 0.4% at its first revision and 0.5% released originally. Meanwhile, the growth for September 2014 was scaled up to 2.8% at its first revision compared with 2.5% reported provisionally.
In terms of industries, sixteen (16) out of the twenty-two (22) industry groups in the manufacturing sector showed negative growth in October 2014, compared with the corresponding month of the previous year.
The industry group 'Radio, TV and communication equipment & apparatus' has shown the highest negative growth of (-) 70.2%, followed by (-) 31.6% in 'Office, accounting & computing machinery' and (-) 24.7% in 'Furniture; manufacturing'.
On the other hand, the industry group 'Electrical machinery & apparatus n.e.c.' has shown the highest positive growth of 10.5%, followed by 9.6% in 'Wearing apparel; dressing and dyeing of fur' and 5.3% in 'Luggage, handbags, saddlery, harness & footwear; tanning and dressing of leather products'.
Some of the important items showing high negative growth are: 'Telephone Instruments (incl. Mobile Phones & Accessories)' (-) 78.3%, 'Gems and Jewellery' (-) 49.8%, 'Heat Exchangers' (-) 43.9%, 'Antibiotics & Its Preparations' (-) 40.9%, 'Sugar Machinery' (-) 38.3%, 'Wood Furniture' (-) 30.7%, 'Ethylene' (-) 29.3%, 'Tractors (complete)' (-) 29.1%, 'Steel Structures' (-) 24.3%, 'Cigarettes (-) 22.3% and 'PVC Pipes and Tubes' (-) 20.5%.
Some of the other important items showing high positive growth during the current month over the same month in previous year include 'H R Sheets' (168.2%), 'Polythene Bags Incl. Hdpe and Ldpe Bags' (81.3%), 'Vitamins' (52.6%), 'Conductor, Aluminium' (32.6%), 'Pens of All Kind' (31.0%), 'Ayurvedic Medicaments' (29.7%) and 'Stainless/ alloy steel' (20.7%).

Ingredients

  • Cooked rice
    3 cups
  • Nutralite
    3 tablespoons
  • Garlic cloves green
    7-8
  • Onions chopped
    1/2 cup
  • French beans chopped
    2 tablespoons
  • Cabbage grated
    2 tablespoons
  • Cauliflower grated
    2 tablespoons
  • Carrot grated
    2 tablespoons
  • Salt
    to taste
  • Garlic paste
    2 tablespoons
  • Green garlic
    stalks




Method

Step 1


Finely chop green garlic cloves.

Step 2


Heat Nutralite in a non-stick wok, add garlic and sauté till brown. Add onions and sauté. Add French beans, cabbage, cauliflower and carrot and mix well.

Step 3


Add salt and cooked rice. Sprinkle ¼ cup water, add garlic paste and mix well.

Step 4


Finely chop green garlic stalks and add and mix well. Cook for 2-3 minutes.

Step 5


Transfer into a serving bowl and serve hot.

SPANISH RICE

Ingredients (with Amount)
Mulberry Rice 80 g
Tomato  50 g
Capsicum 15 g
Spring onion  1
Celery  1 stem
Salt  to taste
Pepper  ½ t
Oil  1 t
Method
Clean, wash and soak rice. Shell peas.
Chop the spring onion, capsicum, tomato and celery
Heat oil, sauté the onion, capsicum and cerely. Add peas and tomatos. Saute well. Save some capsicum strips and tomatoes for garnishing.
Add the strained rice. Sprinkle pepper and salt. Pour double the amount of water and cook till done
Serve hot garnished with long strips of capsicum and deseeded tomato skin cut in strips.

Mulberry Rice 100 g

Water double the quantity of rice by volume

Method
Pick, wash and soak the rice in water for about half an hour.
Place measured amount of water in heavy bottomed pan ( use the water in which rice has been soaked) and heat till it boils.
Add soaked rice to the boiling water and cook covered on a slow fire till the rice grains are tender and all the water dries off [about 12 minutes( 1 table spoon of oil can be added alng with rice, which helps in keeping the rice grains separate).
Serve hot with dal or curry.
